Pineappley Pork Meatloaves

Week 3 Meal 3 of our Hello Fresh journey. We have never meatloaf before so we were very excited to learn the process. We were intrigued at the thought of mixing pork, pineapple and hoisin, and also thought that perhaps it was a take on a Hawaiian/Asian fusion dish. In any case, what Joe was excited about most was the meatloaf. In the wise words of Chazz Reinhold (for all our Will Ferrell fans out there), “Hey Ma, can we get some meatloaf!”

Lessons Learned:

  • Go easy on the chili peppers, especially if you can’t tolerate heat very well

  • Again, read the directions carefully! We forgot to coat the pineapples in the sauce so we may have missed out

Here we added some mashed potatoes as an additional side. If you haven’t noticed, we like adding extra sides to these dishes. The chili pepper infused pork was a little spicier than we had anticipated, but it still had a very nice sweet and spicy taste. Although the pineapples weren’t coated with the sauce while in the oven, we found that sweetness of the pineapples contrasted well with the spiciness of the pork, so it worked out well in the end for us.
