Cheesy Smothered Mushroom Chicken

Week 1 Meal 2 on the Hello Fresh journey. Joe took the lead on this dish. He’s more skilled with cooking the meats! The recipe called for quite a bit of butter and we did not hold back either. We definitely advice using less butter than the instructions suggest, for those who prefer a light meal. Joe also went a little heavy on the salt with this one. Overall, this dish was very good and we learned quite a bit from it.

Lessons Learned:

  • Don’t cut carrots too thin when baking, but if you accidentally do keep an eye on them so they don’t overcook

  • Use less Butter and less Salt! We use Kosher Salt and are learning that less means more with this one.

  • Ensure Chicken is cooked all the way through and let rest for at least 5 minutes when finished baking.

The carrots came out a little burnt so we’ll have to keep a closer eye on them next time.
